When I buy a song off of iTunes, it gets saved as an AAC Audio. How do I cnovert this to a .wav?

iTunes. Import and select the audio you want to covert and go to Advanced>Create MP3 Version (or WAV version, or AAC version), depending on what your conversion settings are. To change your conversion settings, go to iTunes>Preferences, click on the General tab, and click "Import Settings."
Now that I read your post again, changing the import settings may just change what kind of file your downloads are saved as, which would solve the problem altogether.
That is the format you use to put music on DSi's.

You need an mp3 plugin for it to work with audactiy. Do what Noodle said, that's what I do too and it works good. But, beware if you change your import settings to wav to convert it, I suggest changing it back to AAC. WAV files are so much larger, and i was accidentally importing all my music as WAV and it took up a lot of freakin' space.
