This is the first thing that comes to mind.
The only other thing I can think of besides Lechnoloy's film is This YT channel  which has done a few stop-motion videos in 360.

Weasel Animations  I believe that you can create 360 video in blender, but I don't know if you need plugins or not.
If you are simply shooting equirectangular video, you can edit it in anything, even Windows Movie Maker so long as you process/tag it correctly when uploading it.
If you want more control over the 360 image, you will need to shell out some cash, although the Dashwood 360 Plugins are now available for free to owners of FCPX.

Not a video app, but I believe the free program Madefire has a 360 degree immersive panorama based on the insides of a cube...

Stop, dad, gawd you're so embarrassing.

You can produce 360° if you have a 360 camera rig.  If you don't have that (since they can cost you hundreds to thousands), you can try recording at fixed angles (like 90°, 180°, etc.) and use software that can stitch the footage together to create a 360 video.

And then there's the CGI way.  You just have to use the right camera setting.
   
But a 360 video is just a flatten panoramic video file on your computer.  Sites like Facebook and YouTube can give you the 360 experience but the video needs to have 360 metadata embedded in so YouTube/Facebook knows it is a 360° video you're uploading.   As MarkNelsonMovies pointed out, Google has free software to embed that metadata.

I have not yet experimented with spatial audio but it was something I wanted to do with my 360 video but this is new territory so there's a lot of information out there to sift through to really know what you need to create your own spatial audio to accompany your 360 videos.
